Chitin

Chitin ist eines der Hauptbestandteile der Zellwand von Pilzen und des Exoskeletts von Arthropoden (Krebse, Insekten, Tausendfüsser, Spinnentiere) und einiger anderer Tiere. Chitin ist ein Polysaccharid, das aus mehreren Acetylglucosaminen besteht (präzise: N-acetyl-D-glucos-2-amine). Die Acetylglucosamine sind durch β-1,4 Verbindungen gekoppelt - dies ist die gleiche Kopplung wie die von Glukose zu Zellulose.

Chitin kann also als Abart der Zellulose aufgefasst werden, bei der eine Hydoxyl-Gruppe jedes Monomers durch eine Acetylamin-Gruppe ersetzt wurde. Dadurch wird eine stärkere Wasserstoff-Bindung zwischen angrenzenden Polymeren erreicht, die Chitin härter und stabiler als Zellulose macht.

Entgegen der landläufigen Meinung ist aber nicht Chitin dafür verantwortlich, dass ein Insektenpanzer hart ist. Chitin ist für dessen Weichheit und Biegsamkeit verantwortlich. Erst durch die Zugabe von Sklerotin wird die Cuticula hart und stabil.
